1.5 kg of fresh ripe Tomatoes

50ml olive oil

1 onion

3 cloves garlic

12 basil leaves

Salt and pepper


Core and score the tomatoes.

Put the tomatoes in the Varoma dish cook the tomatoes for 20 minutes Varoma speed 2 remove and place into ice water to cool then remove skins.

Set Thermomix to 100c and add the olive oil, garlic, onion in the Thermomix bowl and chop on speed 6 for 10 seconds scraping down with spatula.

Set to speed 1 and cook the onions and garlic for 5 minutes.

Add the tomatoes season with salt and pepper and set to speed 6 for 15 seconds to crush the tomatoes.

Add the basil leaves and set to speed spoon for 40 minutes at 100c.

Adjust seasoning.
